Mango Gazpacho Recipe

Gazpacho is a chilled soup made by blending raw vegetables and is one of the popular dishes of Spanish cuisine. This chilled soup’s origin is in the southern region of Andalusia and is popularly enjoyed with toasts made of white breads. The traditional gazpacho recipe is prepared using bread, tomato, cucumber, bell peppers, onion, garlic, olive oil, wine vinegar, water, and salt. However, the ingredients, texture, and the consistency of this soup recipe vary regionally. Here’s a unique recipe of gazpacho, which is prepared using the same method but different ingredients, and is juicy yet delicious. Mango Gazpacho is an easy-to-make soup recipe that you can prepare in summers for your loved ones and requires very less ingredients. All you need to prepare this chilled soup recipe is: Mango, yellow bell pepper, onion, cucumber, orange juice, parsley, white bread and lime juice. The cool temperature of this mango gazpacho makes it ideal for the summer season and it also provides us with a number of nutrients, which infuses energy inside our body.   • 120 gm mango
  • 30 gm cucumber
  • 10 gm onion
  • 15 ml lime juice
  • 120 ml orange juice
  • 5 gm parsley
  • 2 slices bread slices
  • 30 ml extra virgin olive oil

For Seasoning

  • 2 gm black pepper
  • salt as required
  • 1To prepare this interesting soup recipe, peel the mango and dice it well. Next, peel the onion and finely chop it in a bowl. Then, wash the yellow bell pepper and dice it and take diced cucumber and de seed them. Finally, wash the parsley and finely chop it too. (Note: Leave aside a few diced mangoes for garnishing purpose.)
  • Step 2Now, take a large bowl and mix together extra virgin olive oil and lime juice. Put mango along with onion,yellow bell pepper,cucumber,parsley ,bread slices and orange juice in it and let them soak for around 2 hours.
  • Step 3After two hours, put the soaked mixture in a blender jar and blend till it turns into a fine puree. Once done, strain the mixture in a bowl and sprinkle salt and crushed black pepper in it. Stir to mix well and then adjust the seasoning, if you want. Put this bowl in the refrigerator for chilling purpose for half an hour.
